Ingredients:
- 1½ cups canola oil
- 4 eggs
- 2 cups sugar
- 1 15oz can pumpkin puree
- 3 cups flour
- 2 tsp baking soda
- 2 teaspoons baking powder
- 1 teaspoons salt
- 1 teaspoons cinnamon
- 3 cups semi-sweet chocolate chips
Directions:
- Preheat oven to 375°
- In the bowl of a stand mixer whisk together the canola oil, eggs, pumpkin puree and the sugar until well combined
- Meanwhile in a large bowl combine the flour, baking soda, baking powder, salt, and cinnamon.
- Slowly add 1 cup of the flour mixture at a time to the pumpkin mixture until mixed in well.
- Add chocolate chips and stir.
- Fill ⅔ full into paper lined muffin tins and bake for 15-20 minutes.
