Pumpkin Chocolate Chip Muffins

Ingredients:

  • 1½ cups canola oil
  • 4 eggs
  • 2 cups sugar
  • 1 15oz can pumpkin puree
  • 3 cups flour
  • 2 tsp baking soda
  • 2 teaspoons baking powder
  • 1 teaspoons salt
  • 1 teaspoons cinnamon
  • 3 cups semi-sweet chocolate chips

Directions:

  1. Preheat oven to 375°
  2. In the bowl of a stand mixer whisk together the canola oil, eggs, pumpkin puree and the sugar until well combined
  3. Meanwhile in a large bowl combine the flour, baking soda, baking powder, salt, and cinnamon.
  4. Slowly add 1 cup of the flour mixture at a time to the pumpkin mixture until mixed in well.
  5. Add chocolate chips and stir.
  6. Fill ⅔ full into paper lined muffin tins and bake for 15-20 minutes.
