Pumpkin Maple Cornbread

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/3 cup maple syrup
  • 1/4 cup melted butter
  • 1 cup buttermilk
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Preheat the oven to 375°F (190°C) and grease a square baking pan.
  2. In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the pumpkin puree, maple syrup, melted butter, buttermilk, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
