Pumpkin Mousse Parfait with Caramelized Pecans

Ingredients:

  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup pecans
  • 2 tablespoons brown sugar
  • 1 tablespoon butter

Directions:

  1. In a mixing bowl, whisk together pumpkin puree, 1/4 cup sugar, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  2. In another bowl, whip heavy cream with remaining 1/4 cup sugar until soft peaks form.
  3. Gently fold the whipped cream into the pumpkin mixture until well combined.
  4. In a small skillet over medium heat, melt butter and add pecans and brown sugar.
  5. Cook, stirring frequently, until the sugar has caramelized and pecans are toasted, about 5 minutes.
  6. Let the caramelized pecans cool and then chop them coarsely.
  7. Layer pumpkin mousse and caramelized pecans into serving glasses, alternating layers.
  8. Chill in the refrigerator for at least 1 hour before serving.
