Ingredients:
- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup pecans
- 2 tablespoons brown sugar
- 1 tablespoon butter
Directions:
- In a mixing bowl, whisk together pumpkin puree, 1/4 cup sugar, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
- In another bowl, whip heavy cream with remaining 1/4 cup sugar until soft peaks form.
- Gently fold the whipped cream into the pumpkin mixture until well combined.
- In a small skillet over medium heat, melt butter and add pecans and brown sugar.
- Cook, stirring frequently, until the sugar has caramelized and pecans are toasted, about 5 minutes.
- Let the caramelized pecans cool and then chop them coarsely.
- Layer pumpkin mousse and caramelized pecans into serving glasses, alternating layers.
- Chill in the refrigerator for at least 1 hour before serving.
