Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Directions:
- Preheat the oven to 375°F (190°C).
- In a saucepan, bring the chicken broth to a boil.
- Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes until cooked.
- Season the chicken breasts with paprika, thyme, salt, and pepper.
- In a baking dish, spread cooked quinoa evenly at the bottom.
- Place seasoned chicken breasts on top of the quinoa.
- Arrange the sliced bell peppers, zucchini, onion, and garlic around the chicken.
- Sprinkle Parmesan cheese over the chicken and vegetables.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes or until chicken is cooked through.
