Quinoa Crusted Chicken Bake

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, bring the chicken broth to a boil.
  3. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes until cooked.
  4. Season the chicken breasts with paprika, thyme, salt, and pepper.
  5. In a baking dish, spread cooked quinoa evenly at the bottom.
  6. Place seasoned chicken breasts on top of the quinoa.
  7. Arrange the sliced bell peppers, zucchini, onion, and garlic around the chicken.
  8. Sprinkle Parmesan cheese over the chicken and vegetables.
  9. Cover the baking dish with foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 15 minutes or until chicken is cooked through.
  11. Serve hot and enjoy!
