Ingredients:
- 1 tbsp butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb corned beef, diced
- 1 cup sauerkraut, drained
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- 1/4 cup thousand island dressing
- Salt and pepper to taste
- Rye bread croutons for garnish
Directions:
- In a large pot, melt butter over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Stir in diced corned beef and sauerkraut, cook for 5 minutes.
- Pour in beef broth and bring to a simmer.
- Reduce heat, stir in heavy cream and Swiss cheese until melted.
