Ingredients:

  • 1 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb corned beef, diced
  • 1 cup sauerkraut, drained
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1/4 cup thousand island dressing
  • Salt and pepper to taste
  • Rye bread croutons for garnish

Directions:

  1. In a large pot, melt butter over medium heat.
  2. Add diced onion and minced garlic, sauté until translucent.
  3. Stir in diced corned beef and sauerkraut, cook for 5 minutes.
  4. Pour in beef broth and bring to a simmer.
  5. Reduce heat, stir in heavy cream and Swiss cheese until melted.
  6. Mix in thousand island dressing, season with salt and pepper.
  7. Simmer for 10 minutes, stirring occasionally.
  8. Serve hot, garnished with rye bread croutons.
