Ingredients:
- 2 cups of roast beef leftovers, shredded
- 2 cups of mixed vegetables (carrots, peas, corn, etc.)
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 cup of beef broth
- 4 cups of mashed potatoes
- 1/2 cup of shredded cheddar cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened.
- Add shredded roast beef leftovers and mixed vegetables to the skillet. Cook for 5 minutes.
