Ingredients:

  • 2 cups of roast beef leftovers, shredded
  • 2 cups of mixed vegetables (carrots, peas, corn, etc.)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 1 cup of beef broth
  • 4 cups of mashed potatoes
  • 1/2 cup of shredded cheddar cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened.
  3. Add shredded roast beef leftovers and mixed vegetables to the skillet. Cook for 5 minutes.
  4. Stir in tomato paste and beef broth. Simmer for another 5 minutes. Season with salt and pepper.
  5. Transfer the beef and vegetable mixture into a baking dish. Spread mashed potatoes over the top evenly.
  6. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
