Total Time: 3 hours 20 minutes

Serving Size: Serves 6-8

Ingredients:

  • 1 whole goose, about 8-10 lbs
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the goose under cold water and pat dry with paper towels.
  3. Season the goose inside and out with salt, pepper, minced garlic, and fresh thyme leaves.
  4. Place the goose on a roasting rack in a roasting pan, breast side up.
  5. Roast the goose in the preheated oven for about 2.5 to 3 hours or until the internal temperature reaches 165°F (74°C).
  6. In a saucepan, combine the fresh cranberries, orange juice, and honey. Cook over medium heat until the cranberries burst and the mixture thickens into a glaze.

  9. Serve the roasted Christmas goose with the remaining cranberry glaze on the side.
  10. Enjoy your festive holiday meal!
