Roasted Garlic Hummus

Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 cloves garlic, whole
- 3 tablespoons tahini
- 3 tablespoons fresh lemon juice
- 1/4 cup extra virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika, plus extra for garnish
- 1/2 teaspoon salt
- 2 to 3 tablespoons cold water
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat oven to 400°F (200°C).
- Place whole garlic cloves on a small piece of foil, drizzle with 1 teaspoon olive oil, wrap tightly and roast in the oven for 20 minutes until soft and golden.
- Remove garlic from oven and let cool slightly. Squeeze the roasted garlic cloves out of their skins.
- In a food processor, combine chickpeas, roasted garlic, tahini, lemon juice, cumin, smoked paprika, and salt.
- Pulse ingredients until roughly blended, then while running the processor, slowly add olive oil and 2 tablespoons cold water to reach a creamy, smooth texture.
- If hummus is too thick, add additional water 1 teaspoon at a time and blend again until desired consistency is reached.
- Taste and adjust seasoning with more salt or lemon juice if needed.
- Transfer hummus to a serving bowl, drizzle with olive oil, sprinkle with smoked paprika and chopped parsley.
- Serve with warm pita bread or fresh vegetable sticks.
