Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 small sweet potato, diced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the sweet potato, zucchini, red bell pepper, and red onion with olive oil, garlic powder, paprika, salt, and pepper.
