This Roasted Veggie Sausage Pasta is a hearty and flavorful dish that's perfect for a satisfying weeknight meal. Ingredients:
- 2 bell peppers, (any color will do.)
- 2 yellow squash
- 2 zucchini
- 8 oz package grape tomatoes
- 3 mild Italian sausage brats, cut into medium size pieces.
- 1/2 cup white wine
- 2 tablespoons Italian seasoning
- 4 cups penne shaped pasta, or pasta of your choice.
- Extra virgin olive oil.
- Salt and Pepper to taste.
Directions:
- Preheat the oven to 400 degrees
- Roughly chop the bell peppers, yellow squash, and zucchini, spread evenly on a shallow baking sheet.
- Drizzle with olive oil, and season with salt and pepper to taste.
- Place in the oven and bake for 15 minutes.
- Cook pasta in a large sauce pan with salted boiling water according to package directions, drain and set a side, reserve 1/2 cup of the pasta water.
- When the veggies are finished cooking spread the grape tomatoes over the veggies and cook for an additional 10 minutes.
- Meanwhile in a cast iron skillet, cook sausage on medium high heat until no longer pink, deglaze pan with white wine and scrape the bottom of pan cook until reduced by half.
- Combine the roasted veggies to the cooked sausage, add in the cooked pasta the reserved pasta water and the Italian seasoning. Stir until combined.
