Roasted Veggie Sausage Pasta

Serving Size: 4 servings

Ingredients:

  • 2 bell peppers, (any color will do.)
  • 2 yellow squash
  • 2 zucchini
  • 8 oz package grape tomatoes
  • 3 mild Italian sausage brats, cut into medium size pieces.
  • 1/2 cup white wine
  • 2 tablespoons Italian seasoning
  • 4 cups penne shaped pasta, or pasta of your choice.
  • Extra virgin olive oil.
  • Salt and Pepper to taste.

Directions:

  1. Preheat the oven to 400 degrees
  2. Roughly chop the bell peppers, yellow squash, and zucchini, spread evenly on a shallow baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper to taste.
  4. Place in the oven and bake for 15 minutes.
  5. Cook pasta in a large sauce pan with salted boiling water according to package directions, drain and set a side, reserve 1/2 cup of the pasta water.
  6. When the veggies are finished cooking spread the grape tomatoes over the veggies and cook for an additional 10 minutes.
  7. Meanwhile in a cast iron skillet, cook sausage on medium high heat until no longer pink, deglaze pan with white wine and scrape the bottom of pan cook until reduced by half.
  8. Combine the roasted veggies to the cooked sausage, add in the cooked pasta the reserved pasta water and the Italian seasoning. Stir until combined.
  9. Serve Warm
