Ingredients:
- 4 sausages (pork or chicken)
- 2 medium apples, cored and sliced
- 1 cup sauerkraut, drained
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the sausages to the skillet and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced potatoes and cook, stirring occasionally, until they start to soften, about 10 minutes.
- Add the sliced apples, sauerkraut, caraway seeds, salt, and pepper.
- Cover the skillet and reduce the heat to low. Cook for an additional 15-20 minutes until the potatoes are tender.
- Remove from heat and garnish with fresh parsley before serving.
