Sausage, Apple, Sauerkraut and Potato Skillet

Ingredients:

  • 4 sausages (pork or chicken)
  • 2 medium apples, cored and sliced
  • 1 cup sauerkraut, drained
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the sausages to the skillet and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced potatoes and cook, stirring occasionally, until they start to soften, about 10 minutes.
  5. Add the sliced apples, sauerkraut, caraway seeds, salt, and pepper.
  6. Cover the skillet and reduce the heat to low. Cook for an additional 15-20 minutes until the potatoes are tender.
  7. Remove from heat and garnish with fresh parsley before serving.
