Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots mix
  • 1 cup corn kernels
  • 1 cup diced potatoes
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Biscuit topping:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup buttermilk

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, combine chicken, peas, carrots, corn, potatoes, chicken broth, milk, flour, garlic powder, thyme, salt, and pepper. Cook over medium heat until mixture thickens, stirring occasionally, about 10 minutes.
  3. Pour the chicken mixture into a baking dish.
  4. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt for the biscuit topping.
  5. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.
  6. Drop spoonfuls of the biscuit dough on top of the chicken mixture.
