Savory Herb Baked Halibut with Roasted Vegetables

Ingredients:

• 2 halibut fillets (6 oz each)
• 1 cup cherry tomatoes, halved
• 1 zucchini, sliced
• 1 yellow bell pepper, sliced
• 1 red onion, sliced
• 2 cloves garlic, minced
• 2 tbsp olive oil
• 1 tsp dried oregano
• 1 tsp dried thyme
• Salt and pepper to taste
• Fresh parsley for garnish

Directions:

1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix cherry tomatoes, zucchini, bell pepper, red onion, garlic, olive oil, oregano, thyme, salt, and pepper.
3. Place the halibut fillets on a baking sheet lined with parchment paper.
4. Arrange the vegetable mixture around the fillets.
5. Bake in the preheated oven for 20-25 minutes or until the halibut is cooked through and vegetables are tender.
6. Garnish with fresh parsley before serving.
