Ingredients:
- 1 loaf of crusty bread, cubed
- 1 cup celery, diced
- 1 cup onion, diced
- 1/2 cup unsalted butter
- 3 cups vegetable broth
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
Directions:
- Preheat oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add diced celery and onion; sauté for 5-7 minutes until softened.
- In a large bowl, combine cubed bread, sautéed vegetables, herbs, salt, and pepper.
- Pour vegetable broth over the bread mixture, stirring gently to combine.
- Add the beaten eggs and mix until evenly distributed.
- Transfer the mixture to a greased 9x13 inch baking dish.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
