Savory Herb Stuffing

Ingredients:

• 1 loaf of crusty bread, cubed
• 1 cup celery, diced
• 1 cup onion, diced
• 1/2 cup unsalted butter
• 3 cups vegetable broth
• 1 tablespoon fresh sage, chopped
• 1 tablespoon fresh thyme, chopped
• 1 tablespoon fresh parsley, chopped
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 large eggs, beaten

Directions:

1. Preheat oven to 350°F (175°C).
2. In a large skillet, melt butter over medium heat. Add diced celery and onion; sauté for 5-7 minutes until softened.
3. In a large bowl, combine cubed bread, sautéed vegetables, herbs, salt, and pepper.
4. Pour vegetable broth over the bread mixture, stirring gently to combine.
5. Add the beaten eggs and mix until evenly distributed.
6. Transfer the mixture to a greased 9x13 inch baking dish.
7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
