Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Directions:

  1. In a bowl, whisk together the flour, eggs, milk, salt, and melted butter until smooth. Let the batter rest for 30 minutes.
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped spinach until wilted. Remove from heat and mix in the ricotta, mozzarella, Parmesan, salt, and pepper.
  3. Heat a non-stick skillet over medium heat. Pour a ladle of crepe batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  4. Transfer the cooked crepe to a plate and fill with the spinach and cheese mixture. Roll or fold the crepe and keep warm while you repeat with the remaining batter.
  5. Serve the crepes warm, garnished with extra cheese or a drizzle of olive oil if desired.
