Serving Size: Serves 4
Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for sautéing
Directions:
- In a bowl, whisk together the flour, eggs, milk, salt, and melted butter until smooth. Let the batter rest for 30 minutes.
- In a skillet, heat olive oil over medium heat. Sauté the chopped spinach until wilted. Remove from heat and mix in the ricotta, mozzarella, Parmesan, salt, and pepper.
- Heat a non-stick skillet over medium heat. Pour a ladle of crepe batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
- Transfer the cooked crepe to a plate and fill with the spinach and cheese mixture. Roll or fold the crepe and keep warm while you repeat with the remaining batter.
- Serve the crepes warm, garnished with extra cheese or a drizzle of olive oil if desired.
