Ingredients:

2 beef tenderloin steaks
2 tbsp butter
1/4 cup brandy
1/4 cup beef stock
2 tbsp Dijon mustard
1/4 cup heavy cream
Salt and pepper to taste
Chopped parsley for garnish

Directions:

Season the steaks with salt and pepper on both sides.
In a skillet, melt 1 tbsp of butter over medium-high heat.
Sear the steaks for 3-4 minutes on each side for medium-rare or longer for desired doneness. Remove and set aside.
