Ingredients:

  • 2 beef tenderloin steaks
  • 2 tbsp butter
  • 1/4 cup brandy
  • 1/4 cup beef stock
  • 2 tbsp Dijon mustard
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Directions:

  1. Season the steaks with salt and pepper on both sides.
  2. In a skillet, melt 1 tbsp of butter over medium-high heat.
  3. Sear the steaks for 3-4 minutes on each side for medium-rare or longer for desired doneness. Remove and set aside.
  4. In the same skillet, add the remaining butter and brandy. Be careful as it may flame up.
  5. Add beef stock and Dijon mustard, stir to combine.
  6. Reduce heat to low, then stir in heavy cream. Simmer until the sauce thickens slightly.
  7. Return the steaks to the skillet and coat them with the sauce.
  8. Sprinkle chopped parsley over the steaks before serving.
  9. Serve hot and enjoy!
