Slow-Cooked Moroccan Lamb Stew

Ingredients:

• 2 lbs lamb stew meat, cubed
• 1 onion, chopped
• 3 garlic cloves, minced
• 2 carrots, sliced
• 1 can chickpeas, drained and rinsed
• 1 can diced tomatoes
• 2 cups beef broth
• 1/2 cup dried apricots, chopped
• 1 tsp ground cumin
• 1 tsp ground coriander

Directions:

1. In a slow cooker, place the lamb stew meat, onion, garlic, carrots, chickpeas, diced tomatoes, beef broth, dried apricots, cumin, coriander, cinnamon, salt, and pepper. Stir to combine all ingredients.
2. Cover and cook on low for 8 hours or until the lamb is tender.
