Ingredients:
- 2 cups dried hibiscus flowers
- 8 cups water
- 1 cup pineapple juice
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon grated ginger
- 1 teaspoon vanilla extract
- 1/4 cup fresh mint leaves
- 1 lime, juiced
Directions:
- Rinse the dried hibiscus flowers under cold water to remove any impurities.
- In a large pot, bring 8 cups of water to a boil.
- Add the rinsed hibiscus flowers to the boiling water and reduce the heat to a simmer.
- Simmer the hibiscus flowers for about 30 minutes, then remove from heat and let steep for an additional 15 minutes.
- Strain the mixture through a fine sieve or cheesecloth into a large bowl, discarding the flowers.
- Stir in the pineapple juice, sugar, grated ginger, vanilla extract, lime juice, and fresh mint leaves.
- Chill the mixture in the refrigerator for at least 2 hours before serving.
- Serve over ice and garnish with additional mint leaves if desired.
