Southern Peach Cobbler

Ingredients:

  • 6 fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, 1/2 cup sugar, lemon juice, and cinnamon. Set aside to marinate for 10 minutes.
  3. In another bowl, mix flour, baking powder, salt, and remaining sugar.
  4. Stir in milk, melted butter, and vanilla extract until just combined.
  5. Pour the batter into a greased 9x13 inch baking dish.
  6. Spoon the peach mixture over the batter but do not stir.
  7. Bake in the preheated oven for 40-45 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  8. Let cool for a few minutes before serving.
