Sparkling Champagne Truffles

Ingredients:

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 cup champagne
  • 1/4 tsp sea salt
  • 1 cup white chocolate, melted
  • Edible gold dust (for garnish)

Directions:

  1. In a saucepan, heat the heavy cream over medium heat until just simmering.
  2. Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it sit for 1 minute.
  3. Add butter, champagne, and sea salt to the bowl. Stir until smooth and well combined.
  4. Refrigerate the mixture for 2 hours to set.
  5. Once chilled, use a spoon to scoop out small portions and roll into balls. Place on a lined baking sheet and freeze for 30 minutes.
  6. Dip the truffles into melted white chocolate and place back on the baking sheet.
  7. Sprinkle with edible gold dust for a festive touch.
  8. Refrigerate until the chocolate sets. Serve and enjoy!
