Spice Rubbed Beer Can Grilled Chicken with Lime

Difficulty: MEDIUM

Prep Time: 15 minutes

Cook Time: 1 hour 30 minutes

Total Time: 1 hour 45 minutes

Serving Size: Serves 4

Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 1 can of beer
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 limes, sliced

Directions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together paprika, garlic powder, onion powder, cumin, chili powder, cayenne pepper, salt, and pepper to create the spice rub.
  3. Rub the whole chicken with olive oil, then generously coat it with the spice rub, making sure to cover the entire chicken, including under the skin.
  4. Open the beer can and take a few sips (or pour out about a quarter of the beer). Insert the beer can into the cavity of the chicken, so it stands upright with the legs down and the body cavity supporting the chicken.
  5. Place the chicken on the grill, using the beer can to help it stand upright. Grill for about 1.5-2 hours or until the internal temperature reaches 165°F (75°C), rotating occasionally for even cooking.
  6. During the last 15 minutes of cooking, place the lime slices on the grill to char and caramelize.
  7. Once the chicken is cooked through, carefully remove it from the grill, let it rest for a few minutes, then carefully remove the beer can.
  8. Serve the spice rubbed beer can grilled chicken with the charred lime slices for an extra burst of flavor. Enjoy!
