- 2 large potatoes, peeled and cubed

- 2 tomatoes, diced
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp chili powder
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Directions:
- In a large pan, heat oil over medium heat and add cumin seeds.
- Add chopped onions and sauté until translucent.
- Add minced garlic, grated ginger, turmeric powder, coriander powder, garam masala, and chili powder. Cook for 2 minutes.
- Add diced tomatoes and cook until they soften.
- Add cubed potatoes and cooked chickpeas. Mix well.
- Add water as needed to reach desired consistency. Season with salt.
- Cover and simmer for 15-20 minutes or until the potatoes are tender.
