Ingredients:

  • 2 cups cooked chickpeas
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh cilantro for garnish

Directions:

  1. In a large pan, heat oil over medium heat and add cumin seeds.
  2. Add chopped onions and sauté until translucent.
  3. Add minced garlic, grated ginger, turmeric powder, coriander powder, garam masala, and chili powder. Cook for 2 minutes.
  4. Add diced tomatoes and cook until they soften.
  5. Add cubed potatoes and cooked chickpeas. Mix well.
  6. Add water as needed to reach desired consistency. Season with salt.
  7. Cover and simmer for 15-20 minutes or until the potatoes are tender.
  8. Garnish with fresh cilantro before serving.
  9. Serve hot with rice or naan.
