Spiced Eggplant Curry with Basmati Rice

Ingredients:

  • 1 large eggplant, diced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced

  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 cup coconut milk
  • 2 cups basmati rice
  • 4 cups water
