Ingredients:
- 1.5 pounds beef sirloin, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- Wooden skewers, soaked in water for 30 minutes
Directions:
- In a large bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, ground coriander, salt, black pepper, and lemon juice to make the marinade.
- Add beef cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 2 hours.
- Preheat grill to medium-high heat (about 400°F).
- Thread beef cubes alternating with bell pepper pieces and onion wedges onto the soaked wooden skewers.
- Place skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes to ensure even cooking and slight charring.
- Check internal temperature of beef with a meat thermometer; aim for 135°F for medium-rare or 145°F for medium.
- Remove skewers from grill and let rest for 5 minutes before serving.
