Ingredients:

  • 1 cup cornmeal
  • 4 cups milk
  • 1/2 cup molasses
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Directions:

  1. In a saucepan, combine the cornmeal and milk over medium heat, stirring constantly until thickened.
  2. Stir in the molasses, brown sugar, butter, spices, and salt. Cook for an additional 5 minutes, stirring occasionally.
  3. Remove from heat and stir in the chopped walnuts, if using.
  4. Pour the mixture into a greased baking dish and bake at 350°F (175°C) for 45 minutes or until set.
  5. Serve warm, optionally garnished with a sprinkle of cinnamon or a dollop of whipped cream.
