Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
- 1 can (15 oz) pumpkin puree
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 1 can (14 oz) sweetened condensed milk
- 1 package (8 oz) cream cheese, softened
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
Directions:
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 30 minutes.
- In a separate bowl, mix pumpkin puree, pumpkin pie spice, cinnamon, nutmeg, cloves, and salt until well combined.
- In another bowl, beat cream cheese until smooth. Add sweetened condensed milk and vanilla extract. Mix until creamy.
- Fold the pumpkin mixture into the cream cheese mixture until smooth.
- In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the pumpkin-cheese mixture.
- Pour the filling over the prepared crust and spread evenly. Refrigerate for at least 4 hours or until set.
- Once set, carefully remove the cheesecake from the springform pan. Slice and serve chilled. Enjoy!
