Spiced Pumpkin Delight Cheesecake

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1 can (15 oz) pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 1 can (14 oz) sweetened condensed milk
  • 1 package (8 oz) cream cheese, softened
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Directions:

  1. In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 30 minutes.
  2. In a separate bowl, mix pumpkin puree, pumpkin pie spice, cinnamon, nutmeg, cloves, and salt until well combined.
  3. In another bowl, beat cream cheese until smooth. Add sweetened condensed milk and vanilla extract. Mix until creamy.
  4. Fold the pumpkin mixture into the cream cheese mixture until smooth.
  5. In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the pumpkin-cheese mixture.
  6. Pour the filling over the prepared crust and spread evenly. Refrigerate for at least 4 hours or until set.
  7. Once set, carefully remove the cheesecake from the springform pan. Slice and serve chilled. Enjoy!
