Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 carrots, diced
- 1 bell pepper, chopped
- 1 can (14 ounces) diced tomatoes
- 2 cups beef broth
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions:
- Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same pot, add the chopped onion, garlic, and ginger. Sauté for 3-4 minutes until the onion is translucent.
- Add the diced carrots and bell pepper, cooking for another 5 minutes until they begin to soften.
- Stir in the diced tomatoes, beef broth, cumin, paprika, cayenne pepper, salt, and pepper. Bring to a boil.
- Return the beef to the pot, reduce the heat to low, and cover. Simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
