- 1 can black beans, drained and rinsed

- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced

- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 cup diced pineapple

Directions:
