- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 4 corn tortillas, cut into strips
- 1 avocado, diced
- 1 lime, cut into wedges
- 1/2 cup shredded cheese

Directions:
- In a large pot, heat some oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeño. Cook until softened, about 5 minutes.
