Spicy Lamb Biryani is a classic Indian dish with tender lamb meat and fragrant spices. This aromatic one-pot meal is perfect for celebrations or special occasions.

Ingredients:
- 1 lb lamb meat, cubed
- 2 cups basmati rice, soaked
- 1 onion, thinly sliced
- 3 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp cumin seeds
- 4 cloves
- 2 cardamom pods
- 1 cinnamon stick
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint leaves
- 4 cups water
- Salt to taste
- Ghee or vegetable oil for cooking
Directions:
- In a large pot, heat ghee or oil over medium heat. Add cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté until fragrant.
- Add sliced onions and cook until golden brown.
- Add lamb cubes and cook until browned on all sides.
- Stir in biryani masala, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add chopped tomatoes and cook until they soften.
- Mix in yogurt, cilantro, and mint leaves. Cook for another 5 minutes.
- Add soaked rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice and lamb are fully cooked.
- Fluff with a fork and serve hot garnished with additional cilantro and mint leaves.
