Ingredients:

  • 3 large raw mangoes, peeled and diced
  • 1/2 cup mustard oil
  • 2 tbsp mustard seeds
  • 1 tbsp fenugreek seeds
  • 1/2 cup red chili powder
  • 1 tbsp turmeric powder
  • 1/4 cup salt
  • 1/4 cup jaggery

Directions:

  1. In a pan, dry roast mustard seeds and fenugreek seeds until fragrant. Allow to cool and then grind into a fine powder.
  2. In a large mixing bowl, combine diced mangoes, mustard oil, ground seeds powder, red chili powder, turmeric powder, salt, and jaggery. Mix well to coat the mangoes evenly.
  3. Transfer the mixture into a sterilized glass jar and cover it tightly.
  4. Place the jar in direct sunlight for 2-3 days, shaking it gently every day to ensure the flavors blend well.
  5. Your spicy mango pickle is ready to be enjoyed! Store in a cool, dark place for up to 2 months.
