Ingredients:
- 3 large raw mangoes, peeled and diced
- 1/2 cup mustard oil
- 2 tbsp mustard seeds
- 1 tbsp fenugreek seeds
- 1/2 cup red chili powder
- 1 tbsp turmeric powder
- 1/4 cup salt
- 1/4 cup jaggery
Directions:
- In a pan, dry roast mustard seeds and fenugreek seeds until fragrant. Allow to cool and then grind into a fine powder.
- In a large mixing bowl, combine diced mangoes, mustard oil, ground seeds powder, red chili powder, turmeric powder, salt, and jaggery. Mix well to coat the mangoes evenly.
- Transfer the mixture into a sterilized glass jar and cover it tightly.
- Place the jar in direct sunlight for 2-3 days, shaking it gently every day to ensure the flavors blend well.
