Spicy Mango Tandoori Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 3 tbsp tandoori masala
  • 2 tbsp mango puree
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated

Directions:

  1. In a bowl, mix together yogurt, tandoori masala, mango puree, cumin, coriander, turmeric, paprika, salt, pepper, lemon juice, garlic, and ginger.
  2. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.
  4. Grill the chicken for 6-7 minutes per side or until fully cooked, with nice char marks.
  5. Remove from the grill and let it rest for a few minutes before slicing. Serve hot with naan or rice.
