Spinach Bacon Quiche

Serving Size: 6-8 servings

Ingredients:

  • 1 pie crust, unbaked
  • 8 slices bacon, cooked
  • 2 cups shredded Monterey Jack cheese, shredded
  • 9 oz. package frozen chopped spinach, thawed and drained
  • 1 1/2 cups milk
  • 3 eggs
  • 1 Tbsp. flour

Directions:

  1. Preheat oven to 350 degrees.
  2. Put your pie crust in a pie plate and flute edges.
  3. Sprinkle half of the chopped bacon
  4. in the bottom of the pie crust.
  5. Beat the eggs and add the milk and flour.
  6. Mix well.
  7. Add the drained spinach and cheese.
  8. Mix.
  9. Pour the egg mixture into the pie crust on top of the bacon.
  10. Sprinkle with the remaining bacon.
  11. Bake in a 350 degree oven
  12. for about 45 to 60 minutes until center is set.
