Sticky Ginger Soy Chicken with Broccoli

Ingredients:
- 4 chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 head broccoli, cut into florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix soy sauce, honey, ginger, garlic, rice vinegar, and sesame oil to create the marinade.
- Place the chicken thighs in a baking dish and pour the marinade over them. Let marinate for at least 15 minutes.
- On a sheet pan, toss broccoli florets with olive oil, salt, and pepper.
- Remove chicken from marinade and place on the sheet pan with broccoli.
- Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and broccoli is tender.
- Garnish with sesame seeds before serving.
