For The Puffs
Ingredients:
- 1/2 cup butter (1 stick)
- 1 cup water
- 1/4 tsp salt
- 1 cup flour
- 4 eggs
For The Filling
Ingredients:
- 1 cup whipping cream
- 4 ounces cream cheese, softened
- 1/4 cup confectioner’s sugar
- 1/3 cup chopped strawberries
Directions:
- Preheat oven to 400
- In a large pot melt butter, salt and water over medium high heat till boiling.
- Stir in flour all at once, till a soft ball forms.
- Remove from heat, and let cool for at least 10 minutes.
- Stir in eggs one at a time. Mix together till smooth and shiny.
- Drop a heaping tablespoon on baking sheet lined with parchment paper.
- Bake for 30 min or till golden brown. Gently poke a hole on the top of the puffs to released steam. Let cool while you make the filling.
- In a medium sized bowl using a hand mixer, whip together the whipping cream, cream cheese and strawberries on high speed for about 3 minutes or until light and fluffy looking. Slowly add in confectioner’s sugar and mix on low speed for 1 min.
- Gently cut off tops of puffs and fill with strawberry cream cheese mixture.
- Dust with confectioner’s sugar if desired
