Strawberry Mousse

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 packet unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh strawberries for garnish

Directions:

  1. In a blender, puree the fresh strawberries with sugar and lemon juice until smooth. Set aside.
  2. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  3. In a saucepan, gently heat the bloomed gelatin mixture until it dissolves completely. Remove from heat.
  4. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  5. Slowly pour the gelatin mixture into the whipped cream while continuously whisking.
  6. Fold in the strawberry puree into the cream mixture until well combined.
  7. Divide the mousse into serving glasses and refrigerate for at least 2 hours to set.
  8. Garnish with fresh strawberries before serving.
