Strawberry Stuffed French Toast

Ingredients:

  • 8 slices of thick bread
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter for greasing
  • Maple syrup for serving

Directions:

  1. In a bowl, mix the softened cream cheese and powdered sugar until smooth.
  2. Spread the cream cheese mixture on 4 slices of bread, then top with sliced strawberries and place another slice of bread on top to form a sandwich.
  3. In a separate bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
  4. Heat a skillet over medium heat and add a little butter to grease the pan.
  5. Dip each sandwich in the egg mixture, ensuring both sides are coated.
