Ingredients:
- 1 lb thinly sliced beef (such as ribeye or sirloin)
- 2 Japanese yams, peeled and sliced
- 1 cup shiitake mushrooms, sliced
- 1 cup Napa cabbage, chopped
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sugar
- 2 tbsp vegetable oil
- 4 cups dashi broth
- 1 bunch green onions, chopped
- 1 block firm tofu, cubed
- 4 eggs, for dipping
Directions:
- In a large skillet or sukiyaki pan, heat vegetable oil over medium heat.
- Add the beef slices and sear until browned, then push to the side of the pan.
- Add Japanese yams, shiitake mushrooms, and Napa cabbage to the pan.
- Pour in soy sauce, mirin, sugar, and dashi broth. Let simmer for 10 minutes.
- Add green onions and tofu to the pan, gently stirring to combine flavors.
- Crack eggs into individual bowls for dipping.
- Enjoy by dipping beef, vegetables, and tofu in the beaten raw eggs.
