Sukiyaki-Style Beef and Sautéed Japanese Yam

Ingredients:

  • 1 lb thinly sliced beef (such as ribeye or sirloin)
  • 2 Japanese yams, peeled and sliced
  • 1 cup shiitake mushrooms, sliced
  • 1 cup Napa cabbage, chopped
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 4 cups dashi broth
  • 1 bunch green onions, chopped
  • 1 block firm tofu, cubed
  • 4 eggs, for dipping

Directions:

  1. In a large skillet or sukiyaki pan, heat vegetable oil over medium heat.
  2. Add the beef slices and sear until browned, then push to the side of the pan.
  3. Add Japanese yams, shiitake mushrooms, and Napa cabbage to the pan.
  4. Pour in soy sauce, mirin, sugar, and dashi broth. Let simmer for 10 minutes.
  5. Add green onions and tofu to the pan, gently stirring to combine flavors.
  6. Crack eggs into individual bowls for dipping.
  7. Enjoy by dipping beef, vegetables, and tofu in the beaten raw eggs.
