Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 cup orzo pasta
- 1/4 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 4 tbsp butter
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- Cook orzo pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
- Add shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- In the same skillet, add butter and sun-dried tomatoes. Cook for a few minutes to infuse the butter with tomato flavor.
- Add chicken broth to the skillet and bring to a simmer.
- Stir in cooked orzo pasta and Parmesan cheese. Season with salt and pepper.
- Return the cooked shrimp to the skillet and toss everything together until well combined.
