Sun-dried Tomato Orzo with Garlic Butter Shrimp

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Cook orzo pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. Add shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add butter and sun-dried tomatoes. Cook for a few minutes to infuse the butter with tomato flavor.
  5. Add chicken broth to the skillet and bring to a simmer.
  6. Stir in cooked orzo pasta and Parmesan cheese. Season with salt and pepper.
  7. Return the cooked shrimp to the skillet and toss everything together until well combined.
