Ingredients:

  • 2 medium sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 pre-made pie crust

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them in water until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and mash them in a large bowl.
  4. Add brown sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes, and mix until smooth.
  5. Pour the sweet potato mixture into the pre-made pie crust, smoothing the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes, or until the filling is set and the crust is lightly golden.
  7. Allow the pie to cool before serving.
