Ingredients:

  • 1 lb scallops, cleaned and patted dry
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat.
  3. Add garlic and ginger, stir fry for 30 seconds until fragrant.
  4. Add scallops and stir fry for 2-3 minutes until they start to brown.
  5. Add bell peppers and onion, continue stir frying for another 2-3 minutes.
  6. Pour the sauce mixture over the scallops and vegetables. Stir well to coat.
  7. Season with salt and pepper to taste.
  8. Cook for another 1-2 minutes until everything is heated through.
  9. Garnish with fresh cilantro before serving.
  10. Serve the Szechuan Scallop Stir Fry hot over steamed rice or noodles.
