Tamago Sando (Japanese Egg Sandwich)

Ingredients:

• 4 large eggs
• 4 slices of white bread
• 2 tablespoons mayonnaise
• 1 tablespoon soy sauce
• 1 teaspoon sugar
• Salt and pepper to taste
• Butter for toasting bread

Directions:

1. In a bowl, whisk together the eggs, soy sauce, sugar, salt, and pepper until well combined.
2. Heat a non-stick pan over medium heat and add the egg mixture. Cook, stirring gently, until the eggs are softly scrambled. Remove from heat and let cool slightly.
3. Toast the bread slices in a toaster or skillet with butter until golden brown.
4. Spread mayonnaise on one side of each bread slice.
5. Divide the scrambled eggs evenly over two bread slices and top with the remaining bread slices to make sandwiches.
6. Cut each sandwich in half diagonally and serve immediately.
