Ingredients:

  • 1 whole turkey (12-14 lbs)
  • 2 cups fresh pineapple chunks
  • 1 cup orange juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Directions:

  1. Preheat oven to 325°F (163°C).
  2. In a medium saucepan, combine pineapple chunks, orange juice, brown sugar, soy sauce, garlic, ginger, black pepper, and salt. Simmer over medium heat for 10 minutes until slightly thickened.
  3. Prepare the turkey by patting it dry with paper towels. Rub olive oil all over the turkey and season with salt and pepper.
  4. Stuff the cavity of the turkey with quartered onion, chopped carrots, and celery.
  5. Place the turkey in a roasting pan and brush with the pineapple glaze, reserving some for later.
  6. Roast the turkey in the preheated oven for about 2.5 to 3 hours, basting every 30 minutes with the reserved glaze.
  7. Check the internal temperature; it should reach 165°F (74°C) in the thickest part of the thigh.
  8. Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
