Ingredients:
- 1 whole turkey (12-14 lbs)
- 2 cups fresh pineapple chunks
- 1 cup orange juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Directions:
- Preheat oven to 325°F (163°C).
- In a medium saucepan, combine pineapple chunks, orange juice, brown sugar, soy sauce, garlic, ginger, black pepper, and salt. Simmer over medium heat for 10 minutes until slightly thickened.
- Prepare the turkey by patting it dry with paper towels. Rub olive oil all over the turkey and season with salt and pepper.
- Stuff the cavity of the turkey with quartered onion, chopped carrots, and celery.
- Place the turkey in a roasting pan and brush with the pineapple glaze, reserving some for later.
- Roast the turkey in the preheated oven for about 2.5 to 3 hours, basting every 30 minutes with the reserved glaze.
- Check the internal temperature; it should reach 165°F (74°C) in the thickest part of the thigh.
- Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
