A hearty and colorful stew featuring the trio of corn, beans, and squash, inspired by Native American agriculture.

Three Sisters Stew

Serving Size: Serves 4

Ingredients:

  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced zucchini
  • 1 cup diced butternut squash
  • 1 cup cooked black beans
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Directions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Stir in diced zucchini and butternut squash, cooking for about 5 minutes.
  4. Add corn, black beans, vegetable broth, cumin, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until vegetables are tender.
  6. Serve hot, garnished with fresh cilantro.
