Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons sugar
- 1/4 cup cold butter, diced
- 3/4 cup water
- 2 tablespoons vegetable oil, for frying
Directions:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in the cold diced butter with your fingertips or a pastry cutter until mixture resembles coarse crumbs.
- Gradually add water, stirring with a fork until a soft dough forms.
- Turn dough out onto a lightly floured surface and knead gently 3-4 times until combined.
- Divide dough into 4 equal portions and shape each into a flat round about 1/2 inch thick.
- Heat vegetable oil in a large skillet over medium heat until shimmering, about 3 minutes.
- Cook each bannock round for 4-5 minutes per side or until golden brown and cooked through, adjusting heat as needed to avoid burning.
- Transfer cooked bannock to a wire rack or paper towel-lined plate to drain excess oil.
- Serve warm with butter, jam, or savory toppings of choice.
