Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup fruit preserves (apricot, raspberry, or poppy seed)
Directions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and salt, mixing until well combined.
- Gradually add the flour to the mixture, stirring until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- On a floured surface, roll out the dough to about 1/8 inch thick.

- Place a teaspoon of fruit preserves in the center of each circle.
