Ingredients:

  • 2 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked shredded chicken
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the cooked rice, black beans, shredded chicken, shredded cheese, salsa, cumin, chili powder, salt, and pepper. Mix well.
  2. Lay one flour tortilla on a flat surface. Spoon half of the filling mixture onto the center of the tortilla.
  3. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose the filling.
  4. Repeat with the second tortilla and remaining filling.
  5. Preheat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and heated through.
  6. Remove from skillet and let cool for a minute. Slice in half and serve with sour cream, diced tomatoes, and chopped cilantro.
