Ingredients:
- 2 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup cooked shredded chicken
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup salsa
- 1/4 cup sour cream
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Directions:
- In a large bowl, combine the cooked rice, black beans, shredded chicken, shredded cheese, salsa, cumin, chili powder, salt, and pepper. Mix well.
- Lay one flour tortilla on a flat surface. Spoon half of the filling mixture onto the center of the tortilla.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose the filling.
- Repeat with the second tortilla and remaining filling.
- Preheat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and heated through.
- Remove from skillet and let cool for a minute. Slice in half and serve with sour cream, diced tomatoes, and chopped cilantro.
