Traditional Norwegian Lefse

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup mashed potatoes
  • 1/4 cup butter, softened
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1 tablespoon sugar

Directions:

  1. In a large bowl, combine the mashed potatoes, softened butter, milk, salt, and sugar until well mixed.
  2. Gradually add in the flour, mixing until a soft dough forms.
  3. Divide the dough into 4 equal pieces and shape each piece into a ball.
  4. On a floured surface, roll out one ball of dough into a thin circle, about 1/8 inch thick.
  5. Heat a large skillet over medium heat. Place the rolled-out dough in the skillet and cook for about 1-2 minutes on each side, until lightly browned and cooked through.
  6. Repeat with the remaining dough balls, keeping the cooked lefse warm in a clean towel.
  7. Serve warm with butter, sugar, or your favorite spread.
