Ingredients:
- 1 large sub roll
- 200g sliced turkey breast
- 1/2 cup roasted bell peppers
- 1/2 cup roasted zucchini
- 1/4 cup red onion, thinly sliced
- 1/4 cup arugula
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 1 clove garlic, minced
- 1 teaspoon lemon juice
Directions:
- Preheat the oven to 400°F (200°C).
- Toss bell peppers, zucchini, and red onion in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- While the veggies are roasting, mix mayonnaise, garlic, and lemon juice in a small bowl to make the garlic aioli.
- Slice the sub roll in half and toast it in the oven for the last 5 minutes of roasting the veggies.
- Assemble the sandwich by spreading garlic aioli on both sides of the toasted sub roll.
- Layer sliced turkey, roasted veggies, and arugula on the bottom half of the roll.
- Top with the other half of the roll, slice in half, and serve.
