Turkey Sub Sandwich with Roasted Veggies and Garlic Aioli

Ingredients:

  • 1 large sub roll
  • 200g sliced turkey breast
  • 1/2 cup roasted bell peppers
  • 1/2 cup roasted zucchini
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup arugula
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss bell peppers, zucchini, and red onion in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  3. While the veggies are roasting, mix mayonnaise, garlic, and lemon juice in a small bowl to make the garlic aioli.
  4. Slice the sub roll in half and toast it in the oven for the last 5 minutes of roasting the veggies.
  5. Assemble the sandwich by spreading garlic aioli on both sides of the toasted sub roll.
  6. Layer sliced turkey, roasted veggies, and arugula on the bottom half of the roll.
  7. Top with the other half of the roll, slice in half, and serve.
