Ingredients:

4 slices of artisan sourdough bread
8 oz of Gruyere cheese, sliced
4 oz of sharp cheddar cheese, sliced
2 tbsp of unsalted butter, softened
1/4 cup of caramelized onions
1/4 cup of fig jam
1/4 cup of arugula

Directions:

Spread butter on one side of each bread slice.
Place a slice of Gruyere on the unbuttered side of two bread slices.
Top with cheddar cheese, caramelized onions, fig jam, and arugula.
Cover with the remaining bread slices with the buttered side facing out.
Heat a skillet over medium heat and place the sandwiches on it.
Cook until golden brown and crispy on both sides, and the cheese is melted, about 3-4 minutes per side.
